Freezing Fresh Tomatoes, Step by Step

Fresh tomatoes can be frozen to maintain flavour and use after the growing season. Freezing tomatoes is a simple and practical way to preserve an excess either your garden or the farmer's market. Freezing fresh tomatoes step-by-step:

Choose ripe, firm, unspoiled tomato. Roma, cherry, and beefsteak tomatoes should be fully ripe to freeze.  

STEP 1 

Remove each tomato's stem and core. You may want to cut larger tomatoes into smaller pieces for better handling.  

STEP 2

Carefully place tomatoes in boiling water using a slotted spoon or basket. Blanch till skins split, 30-60 seconds.  

STEP 3

Stop cooking the tomatoes by placing them in the ice water bath with a slotted spoon.  

STEP 4

Cut peeled tomatoes to size. You can freeze them whole, in half, or sliced, depending on your use.
